Ingredients:

  • For the Steak:
  • 1 pound flank steak or skirt steak

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon ground cumin

  • 1 teaspoon chilli powder

  • Salt and pepper to taste

  • For the Nachos:
  • 1 large bag of tortilla chips

  • 2 cups shredded cheddar cheese

  • 1 cup shredded Monterey Jack cheese

  • 1/2 cup pickled jalapeño slices

  • 1/2 cup chopped red onion

  • 1 cup diced tomatoes

  • 1 avocado, diced

  • 1/2 cup fresh cilantro, chopped

  • 1 cup sour cream

  • 1 cup salsa

Directions

  • Prepare the Steak:
  • Preheat the grill or stovetop grill pan to medium-high heat.
  • In a small bowl, mix the olive oil, garlic powder, ground cumin, chilli powder, salt, and pepper. Rub the mixture all over the steak.
  • Grill the steak for about 4-5 minutes on each side or until it reaches your desired level of doneness. Remove from heat and let rest for 5 minutes.
  • Slice the steak thinly against the grain, then chop into bite-sized pieces.
  • Prepare the Nachos:
  • Preheat your oven to 400°F (200°C).
  • On a large baking sheet, spread out the tortilla chips in an even layer.
  • Sprinkle half of the cheddar cheese and Monterey Jack cheese evenly over the chips.
  • Distribute the chopped steak evenly over the cheese layer.
  • Sprinkle the remaining cheese over the steak.
  • Add the pickled jalapeño slices and chopped red onion over the top.
  • Bake:
  • Bake in the preheated oven for 10-12 minutes or until the cheese is fully melted and bubbly.
