Ingredients:

  • 1 tablespoon olive oil

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 2 teaspoons ground cumin

  • 1 teaspoon dried oregano

  • 1/2 teaspoon chilli powder

  • 2 cans (15 ounces each) black beans, drained and rinsed

  • 1 cup vegetable broth or water

  • 1 bay leaf

  • Salt and pepper to taste

  • Juice of 1 lime

  • Fresh cilantro, chopped (for garnish)

Instructions:

  • Heat the olive oil: In a large skillet or saucepan, heat the olive oil over medium heat.
  • Sauté the onions and garlic: Add the chopped onion to the skillet and sauté for about 5 minutes or until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add the spices: Stir in the ground cumin, dried oregano, and chilli powder. Cook for 1 minute, allowing the spices to toast slightly.
  • Add the beans and broth: Add the drained and rinsed black beans to the skillet, along with the vegetable broth or water and the bay leaf. Stir to combine.
  • Simmer the beans: Bring the mixture to a simmer. Reduce the heat to low and let it cook for about 20-25 minutes, stirring occasionally, until the beans are heated through and the flavors have melded together.
  • Season and finish: Remove the bay leaf and season the beans with salt and pepper to taste. Stir in the lime juice.
  • Garnish and serve: Before serving, garnish with freshly chopped cilantro. These beans can be enjoyed on their own or as a side dish for tacos, burritos, or any of your favourite Mexican dishes.
