Ingredients:

  • For the cookies:
  • 1 cup (226g) unsalted butter, softened

  • 1 cup (200g) granulated sugar

  • 1 large egg

  • 2 teaspoons vanilla extract

  • 1 teaspoon almond extract

  • 2 ½ cups (315g) all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ¾ cup (120g) rainbow sprinkles

  • For the frosting:
  • ½ cup (113g) unsalted butter, softened

  • 2 cups (240g) powdered sugar

  • 2-3 tablespoons heavy cream

  • 1 teaspoon vanilla extract

  • Extra sprinkles for topping

Instructions:

  • Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  • Cream the butter and sugar together in a large mixing bowl until light and fluffy, about 3 minutes. Add the egg, vanilla extract, and almond extract and mix until combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Fold in the sprinkles carefully to avoid over-mixing, which can cause the colors to bleed.
