Ingredients

  • For the Chicken Marinade:
  • 4 boneless, skinless chicken breasts

  • 1/4 cup olive oil

  • Juice of 2 lemons

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1 teaspoon ground cumin

  • 1/2 teaspoon smoked paprika

  • Salt and pepper to taste

  • For the Greek Salad:
  • 2 cups cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 red onion, thinly sliced

  • 1/2 cup Kalamata olives, pitted

  • 1/4 cup crumbled feta cheese

  • 2 tablespoons fresh parsley, chopped

  • 1 tablespoon red wine vinegar

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Instructions:

  • Marinate the Chicken:
  • Whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, cumin, smoked paprika, salt, and pepper in a large bowl.
  • Add the chicken breasts to the bowl, ensuring they are well-coated with the marinade. Cover and refrigerate for at least 30 minutes, preferably up to 2 hours for maximum flavor.
  • Cook the Chicken:
  • Preheat a grill or grill pan over medium-high heat.
