Ingredients:

  • 2 tablespoons olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 pound ground beef

  • 1 green bell pepper, diced

  • 1 red bell pepper, diced

  • 1 can (14.5 ounces) diced tomatoes

  • 1 can (6 ounces) tomato paste

  • 2 cups beef broth

  • 2 tablespoons chili powder

  • 1 tablespoon cumin

  • 1 teaspoon paprika

  • 1 teaspoon dried oregano

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon cayenne pepper (optional for heat)

  • 1 zucchini, diced

  • 1 cup mushrooms, sliced

Instructions:

  • Prepare the base: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until softened and fragrant, about 3-5 minutes.
  • Cook the beef: Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  • Add vegetables: Stir in the diced green and red bell peppers, cooking for another 3-4 minutes until they begin to soften.
  • Incorporate liquids and spices: Add the diced tomatoes, tomato paste, and beef broth. Stir in the chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper if using. Mix well to combine.
  • Simmer: Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 30 minutes.
  • Final touches: Add the diced zucchini and sliced mushrooms to the pot. Continue to simmer for an additional 20 minutes, or until the vegetables are tender and the chilli has thickened to your liking.
  • Serve: Taste and adjust seasoning if necessary. Serve hot with your favourite keto-friendly toppings.
