Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 8 oz cream cheese, softened

  • 2 1/2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1/2 cup fruit preserves (apricot, raspberry, or your favourite)

  • Powdered sugar, for dusting

Instructions:

  • In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy.
  • Add the granulated sugar and vanilla extract, mixing until well combined.
  • Gradually add the flour and salt, mixing until a soft dough forms. Divide the dough into two equal portions, flatten each into a disk, and wrap in plastic wrap. Refrigerate for at least 1 hour.
  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • On a lightly floured surface, roll out one portion of the dough to about 1/8 inch thickness. Using a round or square cookie cutter (about 2-3 inches in diameter), cut out shapes and place them on the prepared baking sheets.
  • Place a small dollop (about 1/2 teaspoon) of fruit preserves in the centre of each cut-out. Fold opposite sides of each cookie towards the centre, slightly overlapping the edges and pressing gently to seal.
  • Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, dust the cookies generously with powdered sugar.
