Ingredients:

  • 2 cups heavy cream

  • 1 cup unsweetened almond milk

  • 3/4 cup erythritol or another low-carb sweetener

  • 4 large egg yolks

  • 2 teaspoons vanilla extract

  • Pinch of salt

Instructions:

  • Prepare the Ice Cream Base: Combine the heavy cream, almond milk, and half of the sweetener in a medium saucepan. Heat over medium heat until it begins to steam, but do not let it boil.
  • Mix the Egg Yolks: Whisk the egg yolks with the remaining sweetener in a separate bowl until the mixture is pale and creamy.
  • Temper the Eggs: Slowly pour a small amount of the hot cream into the egg yolk mixture, whisking constantly to prevent the eggs from curdling. Gradually add more of the hot cream mixture until fully combined.
  • Cook the Mixture: Pour the tempered egg mixture back into the saucepan. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
  • Cool the Mixture: Remove from heat and stir in the vanilla extract and salt. Allow the mixture to cool to room temperature, then refrigerate for at least 2 hours or until completely chilled.
  • Churn the Ice Cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  • Freeze: Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.

Notes

  • Enjoy your delicious, low-carb ice cream guilt-free!
