  • 1 packet (2 1/4 teaspoons) active dry yeast

  • 3/4 cup warm water (110°F/45°C)

  • 1 tablespoon olive oil

  • For the toppings:
  • 1 cup canned San Marzano tomatoes, crushed

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • 1 tablespoon olive oil

  • 8 ounces fresh mozzarella cheese, sliced

  • Fresh basil leaves

  • Extra virgin olive oil for drizzling

Instructions:

  • Prepare the dough:
  • In a small bowl, dissolve sugar in warm water. Sprinkle yeast over the top and let it sit for about 10 minutes until foamy.
  • In a large bowl, combine flour and salt. Add the yeast mixture and olive oil to the well in the centre. Mix until a dough forms.
  • Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours until doubled in size.
  • Preheat the oven:
  • Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while it heats.
  • Prepare the sauce:
  • Combine the crushed tomatoes, minced garlic, salt, pepper, and olive oil in a small saucepan. Simmer on low heat for about 10 minutes, stirring occasionally. Remove from heat and let cool slightly.
  • Assemble the pizza:
  • Punch down the risen dough and divide it into two equal pieces. Roll each piece out on a floured surface to your desired thickness.
  • Transfer the dough to a pizza peel or baking sheet dusted with flour or cornmeal.
