Ingredients:

  • 1 cup cannabis butter (see below for instructions)

  • 1 cup granulated sugar

  • 1 cup packed brown sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 3 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 2 cups chocolate chips or other mix-ins (nuts, dried fruits, etc.)

Instructions:

  • In a saucepan, melt the butter on low heat. Add the ground cannabis and simmer on low for 2-3 hours, stirring occasionally. Strain the mixture through a cheesecloth into a bowl, discarding the plant material. Let the butter cool and solidify in the refrigerator.
  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream the cannabis butter, granulated sugar, and brown sugar until smooth and creamy.
  • Beat the eggs individually, then stir in the vanilla extract.
  • Whisk together the flour, baking soda, baking powder, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture, stirring until well combined.
  • Fold in the chocolate chips or your chosen mix-ins.
  • Drop tablespoon-sized dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the oven for 10-12 minutes or until the edges are golden brown but the centres are still soft.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  • Store the cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
