Ingredients:

  • 1 lb (450g) fresh salmon fillets, skin removed and cut into chunks

  • 1 tablespoon olive oil

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 3 carrots, peeled and sliced

  • 3 celery stalks, sliced

  • 2 large potatoes, peeled and cubed

  • 1 can (14.5 oz) diced tomatoes

  • 4 cups (1 liter) fish or vegetable broth

  • 1 teaspoon dried thyme

  • 1 teaspoon dried dill

  • 1 bay leaf

  • Salt and pepper to taste

  • 1 cup (150g) frozen peas

  • 2 tablespoons fresh parsley, chopped

Instructions:

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.
  • Add the carrots, celery, and potatoes to the pot. Cook for another 5 minutes, stirring occasionally.
  • Pour in the diced tomatoes and broth. Add the thyme, dill, bay leaf, salt, and pepper. Bring the mixture to a boil.
  • Reduce the heat to a simmer and cook for about 15 minutes or until the vegetables are tender.
  • Add the salmon chunks to the pot and cook for another 10 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Stir in the frozen peas and cook for an additional 2 minutes.
  • Remove the bay leaf, taste, and adjust the seasoning if necessary.
  • Garnish with fresh parsley before serving.
