1 1/2 cups (360ml) warm water
1 tablespoon (14g) barley malt syrup or honey
4 cups (500g) bread flour
2 teaspoons (10g) salt
1 tablespoon (14g) baking soda (for boiling water)

Instructions:
- Prepare the Dough:
- In a large mixing bowl, combine the active sourdough starter, warm water, and barley malt syrup or honey. Mix until the starter is dissolved.
- Add the bread flour and salt to the mixture. Stir until a rough dough forms.
- Turn the dough out onto a lightly floured surface and knead for about 10 minutes, until the dough is smooth and elastic.
- Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise at room temperature for 4-6 hours, or until it has doubled in size.
- Shape the Bagels:
