Ingredients:

  • 4 cups all-purpose flour

  • 1 1/2 cups warm water (110°F/45°C)

  • 1/4 cup plain yogurt (for tanginess)

  • 2 tablespoons lemon juice

  • 1 tablespoon active dry yeast

  • 1 tablespoon honey or sugar

  • 2 teaspoons salt

  • 2 tablespoons olive oil

Instructions:

  • Activate the Yeast: In a small bowl, combine warm water, honey (or sugar), and yeast. Stir gently and let it sit for 5-10 minutes until frothy.
  • Mix the Dough: In a large mixing bowl, combine flour, salt, yogurt, and lemon juice. Pour in the yeast mixture and olive oil. Mix until a shaggy dough forms.
  • Knead the Dough: Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. If the dough is too sticky, add more flour, a tablespoon at a time.
  • First Rise: Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-2 hours or until doubled in size.
  • Shape the Loaf: Punch down the risen dough to release the air. Shape it into a round or oval loaf. Place the loaf on a baking sheet lined with parchment paper or a lightly floured proofing basket.
  • Second Rise: Cover the loaf with a damp cloth and let it rise again for about 45 minutes to 1 hour.
  • Preheat Oven: Preheat your oven to 450°F (230°C). If using a baking stone or Dutch oven, place it in the oven to preheat.
  • Bake the Bread: Using a Dutch oven, carefully place the risen dough into the preheated Dutch oven. Cover and bake for 20 minutes. Remove the lid and bake for 15-20 minutes, or until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.
  • Cool the Bread: Transfer the bread to a wire rack to cool completely before slicing.

Notes

  • Enjoy your homemade no-starter sourdough bread fresh from the oven, with its delightful tang and rustic charm. This recipe provides an accessible way to enjoy the pleasures of sourdough without the need for a starter, bringing the joy of baking to your kitchen with ease.
