Ingredients:

  • For the Chocolate Cake:
  • 1 3/4 cups all-purpose flour

  • 2 cups granulated sugar

  • 3/4 cup unsweetened cocoa powder

  • 1 1/2 tsp baking powder

  • 1 1/2 tsp baking soda

  • 1 tsp salt

  • 2 large eggs

  • 1 cup whole milk

  • 1/2 cup vegetable oil

  • 2 tsp vanilla extract

  • 1 cup boiling water

  • For the Coconut Filling:
  • 1 can (14 oz) sweetened condensed milk

  • 3 cups sweetened shredded coconut

  • 1 tsp vanilla extract

  • For the Chocolate Ganache:
  • 1 cup heavy cream

  • 8 oz semisweet chocolate, chopped

  • 2 tbsp unsalted butter

Instructions:

  • Making the Chocolate Cake:
  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • Combine dry ingredients: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add wet ingredients: Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed until well combined.
  • Add boiling water: Stir in the boiling water. The batter will be thin, but that’s okay.
  • Bake: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool: Allow cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Preparing the Coconut Filling:
  • Mix filling: In a medium bowl, combine the sweetened condensed milk, shredded coconut, and vanilla extract. Stir until well combined.
  • Making the Chocolate Ganache:
  • Heat cream: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
  • Add chocolate and butter: Remove from heat and add the chopped chocolate and butter. Let sit for 5 minutes, then stir until smooth.
  • Assembling the Cake:
