Ingredients

  • 2 cups corn kernels (fresh, frozen, or canned)

  • 1 cup creamed corn

  • 1/2 cup bell peppers, diced (red or green)

  • 1/2 cup onions, diced

  • 2 cloves garlic, minced

  • 1 cup shredded cheddar cheese

  • 1/2 cup milk

  • 1/4 cup all-purpose flour

  • 2 eggs, beaten

  • 2 tablespoons butter

  • 1 teaspoon dried thyme

  • 1 teaspoon paprika

  • Salt and pepper to taste

Directions

  • Preheat the Oven:
  • Preheat your oven to 350°F (175°C).
  • Prepare the Filling:
  • In a large skillet, melt the butter over medium heat. Add the diced onions, bell peppers, and garlic, and sauté until the vegetables are tender, about 5 minutes.
  • Stir in the corn kernels, creamed corn, and dried thyme. Cook for another 3-5 minutes, allowing the flavours to blend.
  • Make the Batter:
  • In a separate bowl, whisk together the milk, flour, and eggs until smooth. Pour this mixture into the skillet with the corn mixture, stirring constantly to combine.
  • Add salt, pepper, and paprika to taste. Continue to cook until the mixture thickens slightly, about 3-4 minutes.
  • Assemble the Pie:
  • Pour the corn mixture into a greased baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  • Bake:
  • Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the pie is set.
  • Serve:
