Ingredients:

  • 1 lb ground turkey

  • 1 tablespoon olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 zucchini, sliced

  • 1 cup broccoli florets

  • 3 cloves garlic, minced

  • 1 teaspoon fresh ginger, minced

  • 1/4 cup soy sauce (or tamari for gluten-free)

  • 1 tablespoon rice vinegar

  • 1 teaspoon sesame oil

  • 1/2 teaspoon red pepper flakes (optional)

  • Salt and pepper to taste

  • 2 green onions, sliced

  • Sesame seeds for garnish

Instructions:

  • Prepare the Ingredients: Start by prepping all the vegetables. Slice the bell peppers, and zucchini, and chop the broccoli into small florets. Mince the garlic and ginger.
  • Cook the Ground Turkey: In a large skillet, heat the olive oil over medium-high heat. Add the ground turkey and cook until it is browned and cooked through, breaking it up with a spoon as it cooks. This should take about 5-7 minutes. Season with salt and pepper to taste.
  • Sauté the Vegetables: Once the turkey is cooked, push it to one side of the skillet. Add the garlic and ginger to the other side and sauté for about 30 seconds until fragrant. Then, add the bell peppers, zucchini, and broccoli to the skillet. Cook for about 5 minutes, stirring occasionally, until the vegetables are tender but still crisp.
  • Make the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and red pepper flakes if using. Pour the sauce over the turkey and vegetable mixture and stir to combine. Cook for an additional 2-3 minutes to allow the flavours to meld.
  • Serve: Remove the skillet from heat and sprinkle with sliced green onions and sesame seeds. Serve hot, and enjoy your low carb ground turkey stir-fry!

Notes

  • This dish is best enjoyed fresh but can be stored in the refrigerator for up to 3 days. Reheat in a skillet over medium heat until warmed through.
