Ingredients:

  • 4 cups guava pulp (from about 8-10 ripe guavas)

  • 3 cups granulated sugar

  • 1 tablespoon lemon juice

Instructions:

  • Prepare the Guavas:
  • Wash the guavas thoroughly. Cut them in half and scoop out the seeds using a spoon. Pass the pulp through a sieve to remove the seeds, ensuring you have about 4 cups of guava pulp.
  • Cook the Guava Pulp:
  • In a large, heavy-bottomed saucepan, combine the guava pulp, sugar, and lemon juice. Stir well to mix.
  • Cook the mixture over medium heat, stirring frequently to prevent sticking. As it cooks, the mixture will thicken and turn a darker shade. This process takes about 1 to 1.5 hours. Be patient and keep stirring to avoid burning.
  • Check the Consistency:
  • To test if the paste is ready, drop a small amount on a plate. If it holds its shape and doesn’t spread, it’s done. The paste should be very thick and sticky.
  • Set the Paste:
  • Line a baking dish or mould with parchment paper. Pour the hot guava paste into the dish, smoothing the top with a spatula.
  • Allow it to cool completely at room temperature. Once cool, cover and refrigerate for at least 24 hours to firm up.
  • Store and Serve:
  • Cut the guava paste into slices or cubes. Store in an airtight container in the refrigerator. Guava paste can last for several weeks if properly stored.

Notes

  • Guava paste is a delightful treat that brings the tropical flavors of guava to your kitchen. With its sweet, fruity taste and versatile use, it’s a fantastic addition to both sweet and savory dishes. Enjoy the process of making this homemade delicacy and savor the authentic taste of guava.
