Ingredients

For the Bagel Base
  • 2 cups Almond Flour Provides structure and a low-carb base; feel free to swap it with other nut flours.
  • 1 cup Cottage Cheese Can be replaced with ricotta cheese or Greek yogurt.
  • ¼ cup Coconut Flour Use sparingly, as too much can dry out the bagels.
  • 1 tablespoon Apple Cider Vinegar Enhances flavor; lemon juice is a good substitute.
  • 1 teaspoon Baking Soda Check the expiration date for effectiveness.
  • ¼ cup Melted Butter Can be substituted with coconut oil for a dairy-free option.
  • 2 large Eggs No substitutes recommended for this recipe.
For the Topping
  • 2 tablespoons Everything but the Bagel Seasoning Sprinkled on top for extra flavor; sesame seeds or poppy seeds can be alternatives.

Equipment

  • Food processor
  • donut pan
  • Oven

Method

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, combine almond flour, cottage cheese, coconut flour, apple cider vinegar, baking soda, melted butter, and eggs. Pulse until smooth, about 30 seconds.
  3. Allow the batter to rest for about 5 minutes to absorb moisture.
  4. Grease a donut pan with cooking spray or melted butter.
  5. Spoon the rested batter into the cavities of the greased donut pan, filling each about three-quarters full. Sprinkle everything but the bagel seasoning on top.
  6. Bake for 25-30 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Remove from the oven and let cool for 10 minutes before transferring to a wire rack.

Notes

Fresh baking soda is essential for proper rising. Greasing the pan well prevents sticking, and resting the batter enhances texture.
